After the change of system in Slovakia viniculture stopped its development. Through establishment of the EVIRS (Európskeho vinárskeho rytierskeho stavu – European wine knight status) consulate for the Slovak Republic in Pezinok as an institutional basis of the European wine knightage in Slovakia, new possibilities to retain the cultural heritage in the area of viniculture, production and sale of wine, as well as education and training from the new point of view of wine as a product of health protection when wine is a part of nutrition habits (French paradox). The Slovak viniculture thanks to several implemented international projects is gradually increasing its importance and getting known not only in the EU, but also in other parts of the world.In order to maintain the started trend and mainly to support the Slovak viniculture, it is required to secure for the Slovak wine –dressers and wine makers permanently new information about technologies, materials and processes in viniculture and wine processing. Naturally, an inevitable part of those activities is also culture of its sale and presentation of viniculture products. Therefore it is required beside the elementary education implemented in secondary wine schools and partially at the Agricultural University in Nitra, to secure education of SMEs and general public dealing with viniculture, wine processing, as well as its sale in order to retain permanent progress and secure use of innovative technologies and materials. EVIRS as an association of wine farmers, wine processors and sellers, as well as consumers use to organise meetings for exchange of information, visits, wine-tasting, lectures, monitoring and initiation of new trends in research and production technologies and their application in Slovak conditions. EVIRS is interested in institutionalisation of those training activities and provide in the Slovak Wine Academy in Pezinok advanced courses for SMEs as well as all people dealing with growing, processing and sale of wine who are highly interested in this topic.
