Moderní trendy v gastronomii a současné trendy evropského marketingu

Modern Trends in Gastronomy and Contemporary Trends of European Marketing is the name of this project which is focuded on preparing and professional training for 30 best three-year Apprenticeship Programs (Catering Studies – Waiter/Chef Training) pupils and for 8 best Management of advertising and art studies students. The quality and sphere of this training is so unique that it is not possible to organize it in a normal way. We have known Turkish cuisine through the LdV project called Discovering of the heritage of Turkish gastronomy. This project was realized in the same area Cappadocia and we focused on what is typical for Turkish cuisine and on the differences between it and the other European cuisines. We have known that contemporary Turkish cuisine is not heavy, too spicy but it is various and can be included in the best and healthy cuisines in the whole world. We continued and focused on using modern trends in gastronomy, which we can find in this cuisine. For example preparing typical local meals, using local ingredients and meats, which are not too fat. Pupils prepared and served chicken, lamb and mutton meals, fish, seafood, typical local vegetable salads, fresh fruit juice, side dishes and desserts. They have known the modern technological processes used in Turkish gastronomy, which are not the same as used in the Czech Republic. In Turkey there is typical to stew, cook, toast, use more convection ovens in contrast to Czech cuisine with typical using of frying, too much using of flour, cream, fat meat and meat products. The Kapadokya Egitim Akademisi Dernegi was a partner organization for professional training of Catering Studies – Waiter/Chef Training pupils (A1), which members have cooperated with our school in three Leonardo da Vinci projects as employees of the secondary vocational school Nevsehir Teknik ve Endustri Meslek Lisesi. 30 pupils and accompanying person took part in every 3 week-run in the Cappadocia Cave Resort Hotel & Spa, Kapadokya Lodge and Dedeman Hotel. The Landesberufsschule St. Poelten (LBS) was a partner organization for professional training of Management of advertising and art studies students (A2). The task of the partner organization was to assure the 8 week professional training in the Management and sales department of the international firm Bramac, accommodation and board. The participants became a coequal part of the staff, they involved in the firm´s and department´s operation and had the possibility to compare the Czech and European system of work in this area. In their spare time they also had the possibility to experience the life in Austria, its culture and gastronomy. Eight pupils took part in two 8 week-runs (in 2014 and 2015). Cultural, language and professional training course was organized by SOŠ Luhačovice, as well as the transport and administrative issues (insurance, agreements etc.). Pupils have improved their knowledge of foreign languages (English and German) and professional skills. They have known this country, environment, learned to respect people of different cultures and religions, they made new professional and personal relations and became more independent. The whole stay was contributed to improvement of ICT skills and it also allowed our pupils to get to know the latest techniques and technical equipment. These facts will increase the competitiveness in the labor market and future professional education of project´s absolvents. The results of this project are used and will be used by our school and our social partners not only in the Czech Republic but also abroad.
