Implementation of an innovative protocol for the valorisation of extravirgin olive oil (INNOVOIL)

The goal of the project is to establish a well defined shared protocol based on the principal that all the phases of the chain take an important role in determining a high quality product. In particular there are the following objectives: • Critical review of all phases of production to define a methodology based on monitoring, through sensors, the parameters acceptable in terms of quality and presence of any harmful substances either during the production process or during the conservation. • Drawing up a common protocol showing the production process accompanied by the values measured during the different steps of the process, so enabling to bring the product on the market ensuring a superior quality. • Exploring the feasibility and performances of new packaging solutions for extra virgin oil by means of proper studies and analysis made in collaboration with academic institutes and a market research to evaluate the degree of acceptance by consumers. The purpose is to valorize the production, creating a sort of product innovation that meets consumers needs, distribution and storage of the product.
