"Vendéglátós tudásimport" - szakács és pincér tanulók szakmai gyakorlata Európa országaiban

In 2006 the Hungarian Government determined its strategy in the „New Hungary Development programme”. The medium-term development plans included the establishment of a compatible economy and the development of tourism is stated as one of the key issues. Our institution is situated in the middle of the Southern Great Plains region. The Hungarian Government accepted the Southern Great Plains Operational Programme on 6th December 2006. (CCI-number: 2007 HU 161 PO 004). Among its specific aims, the II. priority axis places special emphasis on developments related to tourism. It is crucial to host as many guests as possible and to provide them with the necessary services so that they could be satisfied. The increasing number of guest nights can only be achieved with high standard hospitality. In our planned project our students can get widepread hospitality industry knowledge from Northern Europe to Southern Europe.
Our project titled „Catering knowledge import – practice of chef and server students in European countries” was accredited and got the VET mobility certificate.
Within the last five years we have continuously expanded our cirlcle of partners. On one hand, partnerships have been established directly with business organizations (such as: Ristorante Bano Senigallia/IT, Hotel Klosterbräu Seefeld/AT, Hotel Ampelia Beach Gennadi/GR), on the other hand with Secondary School of Hospitality and Tourism, who made it possible for our students to realize their vocational practice at their partner apprenticeship places.
In our current application we are planning to realize the one-month placement of 31 chef, server and pastry chef trainees with 9 partners; 5 of them are VET providers, 3 business organizations and one intermediary partner, who is our new Maltese partner organizing the placement of our 2 students. During their foreign placement the trainees can get to know new technologies, spices and seasonings. They will be working with ingredients which are only rarely used in Hungary such as: special seafood, snails; they can also collect recipes, which could be shared with their classmates and their VET teachers.
Before mobilities we provide a one-month preparatory course for our students, which includes language, vocational language, cultural and psychological training. A centralised online scheme provided by the European Commission will also monitor the linguistic competences of the beneficiaries. The language improvement will also be checked with our tests.
A special emphasis will be placed on the continuous assessment of the project, which will be done not only by the coordinator but also by the accompanying teachers, foreign mentors and the students. Our measuring tools are questionnaires of self-evaluation and satisfaction elaborated in advance.
After the mobilities our students will give presentations in which they are going to talk about their experiences, make a poster and articles will be published in the regional press both in Hungary and abroad, interviews will be given, and an online presentation will also be placed on the website of the school. On our school open days we give presentations for the primary school leaving students and their parents.
In the end, a dissemination closing ceremony will be organized, where beyond listening to the presentations of the students, the participants can also taste some titbits prepared by our students following their recipes brought from the host countries and the beneficiaries will be also given their Europass mobility documents.
We are expecting the improvement of the foreign laguage skills and the personality development of our beneficiaries as well as the enrichment of their vocational knowledge from the programme.
A longer-term effect is that the students having been abroad can fulfil the expectations set towards young employees more easily. Students can share the experiences of their four-week-mobility, their foreign vocational practice in real life work situations at home thus bringing the vocational training programmes of the VET providers and apprenticeship places up-to-date. The skills acquired during the mobilities can be recognized in other EU member countries and the process of training might transform. This might also be an expected positive effect.
