The project “Mediterranean cuisine in the base of healthy nutrition ” will be realized with partners from Spain – Tribeka and from Italy – Serindform organizations. Its aim is enrolling students from the Professional High School of Tourism "Alexander Paskalev" in the town of Haskovo going through their basic professional education. The goal of the project is to increase the students` competitiveness by improving their professional and language skills in an international environment according to the requirements of the labour market and the European quality standards. Young chefs` training, who are skilful at healthy food preparation, as well as the appliance of HACCP self- control system are in accordance to the modern tendencies and needs of trained employees in restaurant business. By having practical trainings in countries experienced in healthy food preparation students will acquire new professional skills in compliance to the labour market. Working under such conditions will improve their language competence along with their skills to work in a team. It will also help them develop their personal qualities.The project will be implemented within 24 months. Two motilities are planned to be carried out, each of them in 2 stages. The first stage will be realized in Bulgaria. At this stage we will select and prepare the beneficiaries both men and women who will be given equal opportunities. In order to increase the level of social integration ten students from unequal social status will be enrolled in the group. A linguistic, cultural and topical training will be available for the beneficiaries in the high school. In order to provide opportunities for work in a real setting we will organise Spanish and Italian courses focused on professional vocabulary. The students will get some knowledge on the mentality and communication patterns in the host country as well as the standard of behaviour both in public places and in restaurants, cultural and historical sites.The mobilities will be realized during the second stage in Spain and Italy for a period of three weeks. We planned the practice for students to be implemented in Malaga, Spain from 03/04 to 21/04/2017, and practice in Massa, Italy from 19/06 to 07/07/2017.Each group will consist of 15 students at the age of 16-18 who are being trained for cooks. The practical training will be implemented under working programmes co-ordinated between the Professional High School of Tourism and Tribeka, Spain and Serindform, Italy Organizations. The topics have been selected so that students can improve their knowledge and skills and also form a new and basic for the profession competence according to the needs of the labour market. The partner are engaged to provide suitable working places for the implementation of the working programme and mentors to guide and help the beneficiaries, as well as supervise their daily work.As a result of the implemented international practical training students will enrich their professional and language skills and will adopt new ones which are specific to the profession- healthy techniques and methods of food preparation, decoration of dishes and sea food, reading of parameters and filling in papers according to the HACCP system.Spending time abroad will develop the personal qualities of the beneficiaries , their skills for team work and their general knowledge as well. The host organizations and our school will validate the acquired competence with an Europass Mobility document.The project team will summarize and analyse the results. The effectiveness of the realized activities will be reported. The positive experience will be adopted and integrated in the teaching process. The school will spread the results of the project and will also provide other professional high schools and business partners with the gained experience.The Professional High School of Tourism „Aleksandar Paskalev” carries out a policy of spreading and developing international collaboration with schools and organizations from the EU, as well as improving the mobility of students and teachers. The international collaboration is developed in close relationship with our school mission which aims at turning it into a future oriented school, open to creativity, innovations and exchange. Our partners` positive experience will be used to enrich school training programmes and to make products supporting the professional training. The realization of the project „ Mediterranean cuisine in the base of healthy nutrition” will contribute to a better quality of education, closer relationships with the business and raising the authority of the school.
