This mobility project, conceptualized and implemented by both the teaching and the administrative staff of Lycée Régional Polyvalent Stanislas, would apply to a group of 30 second and final year secondary school Baccalauréat Professionnel (French vocational school diploma) students, with the goal of preparing them for careers in cookery, restaurant service and bakery. These economic sectors are always looking for new professional staff, and expect their future employees to have the ability to adapt and to welcome visiting international guests with ease, confidence, competence and efficiency. The scheme would also involve four teachers of technical and academic subjects. The project aims to match the needs of theoretical and practical professional knowledge of the pupils and employers. To transform our students into competent professionals and to arm them with confident linguistic knowledge that allows them to promote their cultural and gastronomical patrimony as part of a professional exchange are the goals of our project. We will be able to facilitate their development whilst fulfilling the expectations of our European partners thanks to obligatory training periods that are part of their school curriculum. The traineeships, the majority of which have taken place in Scotland, have taken place in local bakeries or well-known and popular gastronomic establishments, some of which have been awarded Michelin stars. This experience enhances their CV and puts them at an advantage when they are applying for jobs in the future. This project also serves as a venture in human relations between similar European educational institutes; although links already exist it is necessary to develop them further in order to solidify and establish the partnerships. We hope to develop linguistic and pragmatic exchanges out with the European Union traineeship periods in order for the pupils to understand new ways in which to work, under various conditions and whilst experiencing their counterparts’ day-to-day life. Also this would enable them to discover and appreciate the importance and value of being a European citizen. The expected impact on the participants will manifest itself through the number of European certifications on the diploma that will be validated, the high marks obtained in the obligatory oral foreign language section of the Baccalauréat, the number of offers given to those seeking further education but especially for students who may be hired on a full time or summer-job basis where they did their internship or anywhere else in Europe… The results obtained by these exchanges must take advantage of other establishments and organisations who do not dare to participate, or who doubt the virtues of such an opportunity.
